Bean and Cheese Burritos with Homemade Pico
Side: Salad
{30 minute meal, hot weather eats}

Ingredients: Tortillas Sharp cheddar chunks Penzeys Southwest Seasoning Louisiana Hot Sauce Refried beans |
Warm a skillet to medium. Warm the tortilla. Put a small scoop of beans down. (If you like you can warm the beans first in the microwave for a few minutes to make sure they are nice and hot.) |
Push a chunk of cheddar cheese into the center. Sprinkle with some Southwest Seasoning. A couple shakes of Louisiana Hot Sauce. |
Add another small scoop of beans, this creates a warm cheesy center, yum! |
Fold the sides over. {Cute nails, right!} |
Fold the other sides over, like a little package. |
Now flip it so those sides are down, they will seal and get crispy. |
Make the rest the same way. |
Flip them, lovely right??? |
That's it, a super simple bean and cheese burrito, with a crispy outside and a cheesy center. |
Make some fresh pico to go with it! I topped ours with pico, sour cream, and more Southwest Seasoning. |
Pico De Gallo
Ingredients
- 1/2-1 Yellow Onion Diced
- 4-6 whole Roma Tomatoes Diced
- 1 whole Jalapeno Diced Finely
- 1/2 bunch Cilantro Chopped
- 1 Lime Juice
- 1/2 teaspoon Salt
Directions
- Cut, mix, taste add any needed ingredients.
- You can add mango and/or fresh pineapple for fruit pico. Sometimes I add a garlic clove too.
