Up this week - Easy homemade BBQ sauce, bean burritos with a pocket of cheese, a delicious one skillet dinner, and the perfect summer dessert!
~ Weekly Menu ~ I fill in what I'm planning for the week then add all needed ingredients in the bottom section. |
Then, I take this list to my kitchen and cross off anything I already have on hand. Whatever items are not crossed off the menu list, are items I need to buy that week |
Yes, you're reading this correctly. For this week I only

The best part, the husband needed to go to Walmart over the weekend for something for the car and said do you need anything, well yes! A gallon of milk and two bunches of raw broccoli, score I didn't even go to the grocery store this week! Second difference a plan makes.

This was my first attempt at making homemade BBQ sauce, I found a simple recipe and it turned out great! I have a few modification for next time, but this was a great start. The recipe makes 2 cups, I'll have leftovers, perfect for an easy dinner next week!

Bean and Cheese Burritos with Homemade Pico
Side: Salad

I love simple bean and cheese burritos, delicious and budget friendly!

Ingredients: Tortillas Sharp cheddar chunks Penzeys Southwest Seasoning Louisiana Hot Sauce Refried beans |
Warm a skillet to medium. Warm the tortilla. Put a small scoop of beans down. (If you like you can warm the beans first in the microwave for a few minutes to make sure they are nice and hot.) |
Push a chunk of cheddar cheese into the center. Sprinkle with some Southwest Seasoning. A couple shakes of Louisiana Hot Sauce. |
Add another small scoop of beans, this creates a warm cheesy center, yum! |
Fold the sides over. {Cute nails, right! I'll do a post about those this week.} |
Fold the other sides over, like a little package. |
Now flip it so those sides are down, they will seal and get crispy. |
Make the rest the same way. |

That's it, a super simple bean and cheese burrito, with a crispy outside and a cheesy center. |
Make some fresh pico to go with it! I topped ours with pico, sour cream, and more Southwest Seasoning. |
Pico De Gallo
Ingredients
- 1/2-1 Yellow Onion Diced
- 4-6 whole Roma Tomatoes Diced
- 1 whole Jalapeno Diced Finely
- 1/2 bunch Cilantro Chopped
- 1 Lime Juice
- 1/2 teaspoon Salt
Directions
- Cut, mix, taste add any needed ingredients.
- You can add mango and/or fresh pineapple for fruit pico. Sometimes I add a garlic clove too.

Anything that needs to be eaten from the week comes out and everyone creates their own meal with those items. If we don't have any leftovers, then we make something from pantry/fridge staples.

One Skillet Enchiladas

This was a new recipe to try, found it on Pinterest. It's the goodness of enchiladas without the oven; perfect for warm summer days! A deconstructed enchilada/burrito all made in a skillet - ground beef, bell peppers, and rice, very tasty. Husband approved! This will be added to my summer recipe staple list.
The leftovers I portioned out into containers and put on our leftover shelf for easy lunch grabs. They stored and reheated perfectly too in the microwave. One day, I ate it with chips like a dip. It made a lot, dinner for two and five lunches.

{Changes I made - I also added 1 tablespoon of Chili Powder and a ¼ of a teaspoon of Cumin. I did not put it in the oven to melt the cheese, I just add the remaining cheese and put the lid on; I want to have this for a hot weather meal, so I wanted to try no oven and see if it worked.}

Peanut Butter Fudge Pie
This is a summer favorite, love no bake desserts! My favorite hot fudge is Mrs. Richard's and Walmart didn't have it so I looked up Hot Fudge recipes on Pinterest and found this simple three ingredient recipe!

{Pie Recipe}
Bev's Easy Peanut butter & fudge swirl pie
Ingredients
- 1 - 8 ounce cream cheese
- 1/2 cup sugar
- 1/4 cup peanut butter
- 2 cups cool whip thawed
- 1 - oreo pie crust
- 1/4 cup Hot Fudge
Directions
- Beat cream cheese, sugar and peanut butter in large bowl with mixer until blended. Gently stir in Cool Whip until blended.
- Spoon into crust; drizzle with fudge topping . Swirl gently with knife.
- Refrigerate 4 hours or until firm. Refrigerate leftovers.
